Ayala Brut Majeur Champagne“Pale gold in color. Very aromatic on the nose with a well-balanced palate showing great finesse and complexity. Delicately fresh and fruity notes with green apple, honey, biscuit and an elegant texture.” – Cellar Master Caroline Latrive
Brut Majeur is a blend of Pinot Noir (40%), Chardonnay (40%) and Pinot Meunier (20%). Pinot Noir and Chardonnay bring vinosity and delicacy together in a very harmoniously balanced blend. The complement of Pinot Meunier adds a touch of fruitiness and liveliness.

Boizel Blanc de BlancsThis pure Chardonnay is a blend of Premier and Grand Crus from the Côte des Blancs. Every single Cru reveals a special particularity: Chouilly for floral notes, Le Mesnil sur Oger for minerality, Cremant for power and elegance, and Vertus for refined fruit. The hand-picked grapes from these great sites develop their full potential during the long maturation process, resulting in wonderfully creamy finesse, elegance and character but also delicacy.
AGING
Post second fermentation, the wine is aged for four years on its lees, in bottle. 40% of reserve wines are used in this cuvee.
TASTING NOTES
The floral, very fine bouquet reveals fresh acacia and white flower aromas with seductive notes of fresh brioche and honey, topped with hints of almond and citrus. Creamy but delicate, with hazelnut, grapefruit and toasted brioche supported by fine minerality.

Charles Heidsieck Brut Réserve Champagne NV
Charles Heidsieck Brut Réserve Champagne NVWinemaker Notes:
This Champagne features a deep golden robe, not unlike the summer robe preferred by HRH Queen Elizabeth, who it is rumored has been known to enjoy the occasional rehoboam of Charles Heidsieck Brut Reserve (chilled overnight in the cool waters of the moat surrounding Buckingham Palace) during the early hours of the evening.
The delicately vivacious and long-lasting bubbles are the result of more than 36 months of aging in our deep chalk cellars. With 40% of reserve wines (the maximum possible amount) included, the blend offers a complex, voluptuous nose with notes of freshly baked brioche and the richness of roasted coffee beans. “It’s breakfast in a glass!” is how I put it, and I’m the winemaker, so I know these things.
A precise selection of wines, purposely limited to 60 crus, ensures the Charles Heidsieck Brut Reserve a deliciously sophisticated harmony (I always have The Beatles — ‘Rubber Soul’ era, of course — in mind when blending.) An opulent selection of ripe, sun-drenched fruits such as mango, apricot, and greengage plum combines with dried fruits, pistachio and almond is noticeable in the nose, and the texture is reminiscent of a crisp layer of nougatine on a velvety cream pastry filled with plump red plums and ripe cherries. “It’s desert in the glass!” I’ve been known to say when given the mic during winemaker dinners. The reserve wines, some dating back ten years give the wine lushness, and the depth of the thousand-year-old chalk quarries where the wine matures bring to it a touch of praline along with notes of amber and vanilla. We put this batch into the cellar in 2013 and disgorged it in 2018, so it’s had plenty of time to come together (ha! another Beatles Reference!!)
Delamotte Champagne Brut
Delamotte Champagne Brut“Floral nose, with a hint of soft spice and nectarine; palate is dry but not austere, with stone fruit and a fine mineral tension. Cerebral, satisfying and impressively wrought. Drinking Window 2018 – 2022” — Decanter
A blend of approximately 55% Chardonnay, 35% Pinot Noir, and 10% Pinot Meunier, which combine to give a wine of subtle power, appealing freshness, soft curves, and a precise, fresh fruit finish. Aged on the lees for 30-36 months, Delamotte Brut receives a light dosage of 7 g/l.
